1. The Logic of Butchery Yields
Every commercial cut of meat contains connective tissue, bone, fat, and edible muscle. When purchased from wholesalers in bulk (As-Purchased weight), the cost per pound seems low. However, once trimmed and prepped for cooking, the usable Edible Portion (EP) weight decreases. This increases the real cost per pound. Our system automates this tracking.
2. Ratios Based on Cooking Shrunk Values
Cooking meat at high heat causes muscle protein denaturing, releasing water content. On average, red meat shrinkage ranges from 20% to 30%. Our calculators combine physical tissue trimming losses with thermal cooking shrinkage ratios to provide plate-cost estimates.
